Fiesta Tamale Pie
serves 4
Ingredients
- 3/4 cup cornmeal
- 1 cup beef broth
- 1 lb hamburger
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 (16 ounce) jar chunky salsa
- 1 (16 ounce) can whole kernel corn, drained
- 1/4 cup sliced ripe olives
- 2 ounces reduced-fat cheddar cheese, shredded
Directions
- In a large bowl, mix cornmeal and broth; let stand 5 minutes. Stir in beef, chili powder, cumin, salsa, corn and olives. Pour into a 3 1/2 quart slow cooker. Cover and cook on low 5-7 hours or until set. Sprinkle cheese over top; cover and cook another 5 minutes or until cheese melts.
Shepherd’s Pie
serves 4-6
Ingredients
- 1 lb hamburger
- 1 (8 ounce) can tomato soup
- 1 (14 1/4 ounce) can green beans
- 1 (15 1/4 ounce) can corn
- 4 tablespoons butter or margarine
- 1/3 cup milk
- white onions (Ive never messured, the recipe is still good without it)
- 4 potatoes
- salt
- pepper
- kraft cheese
Directions
- =Preheat oven 350°F.
- =Peel and boil about 4 potatoes for about 20 minutes.
- =Fry 1lb of Hamburger, when done drain and rinse off.
- =Add 1 can of tomato soup to hamburger and mix until all meat is covered. Shut burner off.
- =Take any Cake pan or Casserole dish and add the hamburger with tomato soup and spread evenly .
- =Drain 1 can(14.5oz) of Green beans and (15.25 oz) corn and spread evenly across the top of Hamburger.
- =Drain potatoes and add about 1/3 cup of milk,4 tbs of butter, dash of salt,and pepper. Mash until the potatoes are as smooth as possible. if its still thick u can add more butter or milk. doesnt matter which. I prefer to add more butter.
- =Add the mashed potatoes to the top of the hamburgar and vegetables. and spread evenly across. The amounts of potatoes is up to u. (I like it thick, My husband likes it thin).
- =Take kraft cheese slices or the equvilant and add each slice evenly and closely to each other across the top of the potatoes.You can double the amount of the cheese in case You like lots of cheese.
- =When your oven is preheated to about 350F set inside untill the cheese is melted or untill it is warm.The size of your pan is determined on how long to bake it. the thicker the pan is then set the oven on a lower setting and cook untill it is at your desired warmth.

Stuffed Bell Peppers
serves 4-6
Ingredients
- 1 lb lean hamburger
- 7 slices bacon, cut into small pcs
- 1/2 cup onion, diced finely
- 4-5 garlic cloves, chopped finely
- 1 teaspoon seasoning salt
- 1 teaspoon chili powder
- 1 (8 ounce) can tomato sauce
- 1 slice bread, torn into small pcs
- 3 green bell peppers, medium-large sized
- 3/4 cup sharp cheddar cheese
Directions
- Put hamburger, bacon, onion, and garlic in a skillet.
- Cook until hamburger is brown, drain grease.
- Add seasoned salt, chili powder, bread pcs and tomato sauce.
- Mix thoroughly.
- Cut green peppers in 1/2, cleaning out seeds and membrane.
- Parboil pepper halves in boiling water for 5 minutes.
- Put into 13 x 9 pan.
- Fill pepper halved with beef mixture.
- Put 2 T cheese on top of each pepper half.
- Bake in 350°F oven for 30 minutes.
Super Simple Stroganoff
serves 4-6
Ingredients
- 1 lb hamburger
- 10 1/2 ounces cream of mushroom soup, 1 can
- 1 medium onion, sliced
- 2 cups mushrooms, sliced (mushrooms optional)
- 1/8 teaspoon garlic, minced
- 7/8 ounce brown gravy mix, 1 pkg
- 1/4 teaspoon italian seasoning
- 1/4 teaspoon thyme
- 1/4 teaspoon garlic salt
- 1/4 teaspoon garlic pepper seasoning
- 1/8 teaspoon dill weed
- 1 cup milk
- 2 tablespoons sour cream
Directions
- In a large skillet brown hamburger, onion and mushroom (opt) with minced garlic. Drain.
- Add soup and brown gravy package and seasonings along with some of the milk (the amount of milk depends on how thick or thin you like it- could end being more than 1 cup), bring to a simmer and start taste testing.
- When it tastes just like you like — stir in the sour cream.
- Serve over extra wide egg noodles or rice.
Hamburger Soup
serves 5
Ingredients
- 1 lb hamburger
- 1 onion, chopped
- 1/2 cup celery, diced
- 28 ounces tomatoes
- 2 carrots, diced
- 2 1/2 cups boiling water
- 4 teaspoons salt
- 1 bay leaf
- 1/4 teaspoon thyme
- 1/4 teaspoon basil
- 1/4 teaspoon sage
- 1/2 cup uncooked rice
- 2 potatoes, diced
- 1 cup cabbage, chopped
Directions
- Brown hamburger and drain off the fat.
- Add onions and celery.
- Cook until transparent.
- Add tomatoes, carrots, water, spices and rice.
- Cook 20 minutes. Add potatoes and cabbage.
- Cook 30 minutes more.
- Serve.
Baja Burgers
SERVES 4 , 4 chile cheeseburgers
Ingredients
- 1 lb hamburger, formed into 4 patties
- 4 hamburger buns or kaiser rolls
- 1 medium onion, thinly sliced
- 1 medium sliced tomato
- 1 large avocado
- 4 slices swiss cheese or monterey jack cheese
- 1/4 cup mayonnaise
- 4 whole caned green chilies
Directions
- Hat skillet or start coals in grill .
- Salt and pepper burgers to taste. Add to pan or grill.
- Cut avacodos, remove seed and flesh. Mash avacodo in small bowl.
- Cook burgers til almost done to your liking, add cheese til melted. Spread equal amounts of mashed avacodo and mayo over bottom 1/2 of each bun, then add burger, onion, tomato and one each whole canned pepper. Top with other half of bun–enjoy.
Possum Chili (1995 Ca. Dept. of Fish & Game Chili Contest)
SERVES 10 -12
Ingredients
- 1 cup dried kidney beans
- 1 cup dried pinto bean
- 3 linguica sausage, links
- 1 lb hamburger
- 2 lbs roast chuck
- 4 pork chops, diced
- 2 (14 ounce) cans stewed tomatoes
- tomato sauce (the more, the thicker the sauce)
- 1 red onion, chopped
- 2 garlic cloves
- 1 (12 ounce) jar sliced jalapenos, chopped
- 1 pinch salt
- 1 dash pepper
Directions
- Soak and cook the beans.
- Boil the roast all day or a long time, whatever shreds it first. NOTE: Save the water.
- Mash the meat with a potato masher by hand.
- Fry linguica, hamburger, diced pork chops, and onion.
- Add all ingredient together; add meat water or tomato sauce, depending on whether you want your chili soupy or thick.
- Lasty, add chopped jalapenos and juice to taste. Be careful!
- Add other seasonings or anything else that looks good – like that road kill ‘possum that you’ve been wondering what to do with.
Patricia’s Old Style Classic Spaghetti Sauce
SERVES 6 -8
Ingredients
- 1 1/2 lbs hamburger meat
- 46 ounces canned tomato juice
- 6 ounces tomato paste
- 1 small onion, diced chunky
- 3 fresh garlic cloves
- 1/8 teaspoon italian seasoning (add more if you like)
- 1 teaspoon worcestershire sauce (Lea & Perrins only!)
- 1/2 teaspoon Tabasco sauce
- black pepper
Directions
- Cook onions and garlic with EVOO, add meat, season to taste and cook until meat is brown.
- Drain meat.
- Add all ingredients above. Bring to a boil, add a sprinkle of black pepper to the mix and simmer for 30 to 40 minutes.
- No test tasting until the sauce has a chance to reach it’s full flavor- it takes at least 30 minutes This will feed 6 to 8 people! It’s not spicy, so feel free to add more Italian seasoning!
